Lemonies
1 cup flour
1 cup sugar¼ teaspoon salt
¼ t. baking powder
1 lemon, zest and juice
¾ cup butter, melted
2 eggs
2 teaspoons lemon extract
Preheat oven to 350 degrees. Mix ingredients until well combined. Pour into a greased 8X8 inch pan and bake until knife inserted in center comes out clean. Remove, cool 10 minutes and pour over glaze. (Can be doubled for a (9X13 inch pan, bake a little extra)
Lemon Glaze
1 ½ cups powdered sugar
1 ½ tablespoons lemon juice
1 teaspoon lemon extract
Lemon zest (Lime zest, optional.
Mix sugar, lemon juice and extract until smooth. Add a little extra juice to make a glaze if necessary. Pour over bars. Sprinkle with lemon zest. (lime optional)
