Microwave Meatloaf

While I don't use this recipe very much anymore, when I had little ones around and had very little time, this was one of my quick "go to" recipes.

1 can tomato sauce

2 tablespoons cider vinegar

1/2 teaspoon pepper

1/2 teaspoon garlic

1/2 teaspoon oregano

1/4 teaspoon salt

2 pounds ground beef

3/4 cup dry bread crumbs

1 medium onion, chopped

1 egg

1 teaspoon salt

1/4 teaspoon pepper

Mix tomato sauce, vinegar, 1/2 teaspoon pepper, garlic, oregano, and salt in bowl.  In large bowl, mix beef, bread crumbs, 1/2 sauce mixture, and remaining ingredients until blended.  Invert a 6 ounce custard cup in the center of a round shallow 2 quart baking dish.  Put meat in dish, pour remaining sauce mixture on top.  Cover with waxed paper.  Microwave on high 10 to 12 minutes, rotating 1/4 after 5 minutes.  Let stand 5 minutes.
