Arkansas Biscuits

These biscuits will keep in your refrigerator for a couple weeks. They have a "sour dough bread" type flavor, but are a little heavier, like a biscuit.

1 package dry yeast

1 cup warm water

1 teaspoon salt

1/4 teaspoon baking soda

1/4 cup sugar

4 teaspoons baking powder

3/4 cup oil

2 cups buttermilk

6 cups flour

Dissolve yeast in warm water. Add salt, baking soda, sugar, baking powder, oil and buttermilk. Mix well. Stir in the flour, mixing thoroughly. Cover and refrigerate overnight before using. Do not put in a metal container.

TO BAKE: Pinch off enough dough to fill about 1/2 a muffin tin. Dough will be slightly sticky. Put in well-oiled muffin tins. Set oven for 200 degrees and bake for 15 minutes, then set at 400 degrees and bake for another 10 to 15 minutes or until brown. Dough will keep in refrigerator for up to two weeks.
