Rhubarb Bread

This is such a nice bread. Not overly sweet, the rhubarb adds a really nice flavorful "tang". Delicious!!!

1 1/2 cups brown sugar

1 egg

1/2 cup vegetable oil

1 cup buttermilk

2 3/4 cup

1 teaspoon baking soda

1 teaspoon salt

1 cup rhubarb, chopped

TOPPING

2 tablespoons sugar

2 tablespoons flour

1 tablespoon butter or margarine, softened

Preheat oven to 350 degrees. Mix first 7 ingredients in order listed. Gently fold in rhubarb. Pour into 2 bread pans. Mix topping ingredients and sprinkle on loaves. Bake about 45 minutes or until knife inserted in middle comes out clean.
