Breakfast Enchiladas

2 cups cubed ham

3 cups shredded cheese, divided

¼ cup green onions, chopped

¼ cup minced onion

1 teaspoon garlic salt

8 flour tortillas, medium size

6 eggs

1 1/2 cups half and half OR whole milk

Spray 9X13 inch pan. In large bowl combine 1 ½ cups shredded cheese, ham, onion and garlic salt. Mix well. Starting with one tortilla add ¼ -1/3 cup mixture into the center and roll. Place seam side down into prepared pan. Repeat with remaining tortillas.
Whisk together eggs and milk and pour over tortillas. Cover with foil and refrigerate overnight or at least 4 hours.

Bake at 350 degrees for 30-40 minutes until eggs are set. Remove foil, top with remaining 1 ½ cups shredded cheese and bake until melted.
