Ham and Potato Scallop
You can shorten the cooking time by using a bag of pre-cooked refrigerated potato slices.
5 cups slices potatoes or 2 bags pre-cooked potato slices
2 cups ham, diced
1 can cream of mushroom soup
1/4 cup skim milk
1/2 cup chopped onion
1/4 green pepper, chopped
1/2 teaspoon salt
Dash pepper
1/4 cup butter or margarine
Preheat oven to 350 degrees. Place potatoes and ham in 9X13 pan. Combine soup, milk, onion, green pepper, salt and pepper and pour over potatoes and ham. Mix carefully. Dot top with butter or margarine and bake covered for 1 hour. Remove cover and bake 45 minutes longer, or until potatoes are soft.
For pre-Cooked Potatoes: Bake uncovered 45 minutes until heated through.
