Aunt Lorraine's Ham and Potato Scallop

This is one of those recipes I make all the time. I've used a diced ham slice, bag of diced ham and leftovers from a ham dinner. Also, shorten the cooking time and speed in making the meal if you want, by using a bag of refrigerated potato slices. Use the 98% Fat Free soup and all of a sudden this turns into one of the quickest, low calorie and most delicious recipes in the box.

5 cups slices potatoes

2 cups ham, diced

1 can cream of mushroom soup

1/4 cup skim milk

1/2 cup chopped onion

1/4 green pepper, chopped

1/2 teaspoon salt

Dash pepper

1/4 cup butter or margarine

Preheat oven to 350 degrees.  Place potatoes and ham in 2 quart casserole.  Combine soup, milk, onion, green pepper, salt and pepper and pour over potatoes and ham.  Mix carefully.  Dot top with butter or margarine and bake covered for 1 hour.  Remove cover and bake 45 minutes longer, or until potatoes are soft. Makes 5 servings.
