Aunt Lorraine's Chicken On Rice

This is one of our family favorites that I make all the time starting probably 40 years ago when my aunt added it to our Family Cookbook. 

1 cup rice

2 cups hot water

1/2 cup celery

1 can cream of mushroom soup

1 can cream of celery soup

1 package onion soup mix

1 fryer chicken

Preheat oven to 350 degrees. Combine first 5 ingredients and spread in 9 X 13 inch pan. Lay pieces of chicken on top of rice mixture and sprinkle with onion soup mix. Cover. Bake 2 1/2 hours. Uncover the last 1/2 hour.
