Fiesta Taco Bake

This I make all the time when the kids come home. Everyone loves it and it's so easy. I do use my homemade salsa which makes it extra special.

1 pound ground beef

1 can (15 to 16 ounces) mild, medium or spicy chili beans, undrained 

1 cup salsa

2 cups coarsely broken tortilla chips

1/2 cup sour cream

4 medium green onions, sliced (1/2 cup)

1 medium tomato, chopped (3/4 cup)

1 cup shredded Cheddar or Monterey Jack cheese (4 ounces)

Shredded lettuce

Salsa

Preheat oven to 350 degrees.  Cook beef in 10 inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.  Stir in beans and 1 cup salsa.  Heat to boiling, stirring occasionally.  Place broken tortilla chips in ungreased 9X13 inch pan.  Top with beef mixture.  Spread with sour cream.  Sprinkle with onions, tomato and cheese.  Bake uncovered 20 to 30 minutes or until hot and bubbly.  Top with shredded lettuce and serve with tortilla chips and extra salsa.
