Lasagna

I have tried lots and lots of lasagna recipes over the years and my family didn't like any of them. Then I was chatting on an online recipe site I used to go to and one of my friends swore this one they would like. I was hesitant but tried it and they did!!! I think it's the fresh taste of the canned tomatoes for one thing, maybe the mix of the cheeses or the fact that there's less spices than I've had before, but this one is delicious and passed the family taste test!!!

1 pound sweet Italian sausage

1 clove garlic, minced (may add more)

1 tablespoon basil

1 teaspoon salt

1 (12 ounce) can tomato paste

1 pound can tomatoes

10 lasagna noodles

2 cups ricotta cheese

1 cup cottage cheese

1/2 cup Parmesan cheese

2 eggs

2 teaspoons salt

1/2 teaspoon pepper

2 tablespoons parsley, chopped

1 pound mozzarella cheese, shredded

Preheat oven to 375 degrees.  Brown meat and add the garlic, basil, 1 teaspoon salt, tomato paste and tomatoes.  Simmer for 30 minutes.  Cook the lasagna noodles; drain and rinse.  Mix rest of ingredients together except mozzarella cheese.  To assemble, place 1/2 the noodles in bottom of a 9x13 inch lightly greased pan.  Spread with 1/2 cheese mixture, then 1/2 meat mixture, then 1/2 mozzarella.  Repeat.  Bake for 30 minutes.

Do not use ground beef, using sausage makes the difference.  Do not use all cottage cheese, it doesn't taste as good.  Use the shredded parmesan in a package and not the box.
