Lasagna

I have tried so many lasagna recipes over the years, but couldn't fine one the family would eat. This one was shared by an online friend and it is delicious and passed the family taste test!!!

1 pound sweet Italian sausage

1 clove garlic, minced (may add more)

1 tablespoon basil

1 teaspoon salt

1 (12 ounce) can tomato paste

1 pound can tomatoes

10 lasagna noodles

2 cups ricotta cheese

1 cup cottage cheese

1/2 cup Parmesan cheese

2 eggs

2 teaspoons salt

1/2 teaspoon pepper

2 tablespoons parsley, chopped

1 pound mozzarella cheese, shredded

 



 

 

 

Preheat oven to 375 degrees.  Brown meat and add the garlic, basil, 1 teaspoon salt, tomato paste and tomatoes.  Simmer for 30 minutes.  Cook the lasagna noodles; drain and rinse.  Mix rest of ingredients together except mozzarella cheese.  To assemble, place 1/2 the noodles in bottom of a 9x13 inch lightly greased pan.  Spread with 1/2 cheese mixture, then 1/2 meat mixture, then 1/2 mozzarella.  Repeat.  Bake for 30-40 minutes. Makes 12 servings.
