Creamed Chicken and Biscuits

This recipe comes with a family joke. I got this from my sister and always call it "Rachel'ss Creamed Chicken and Biscuits", The funny part is that I make this ALL the time and she has never made it and can't remember where she got it. All I know is that she gave it to me over the phone one day and it's been a favorite ever since. Even though I keep telling her to try it, she has yet to do so. She thinks it was one of those things she tried at work, really liked it, passed on the recipe and then forgot about it.

2 cups cooked chicken, chopped 

1/2 large onion,, chopped

2 teaspoons butter or margarine

1 can cream of chicken soup

1 cup sour cream

1/2 cup milk

1/2 cup chopped pimentos

1 cup shredded cheddar cheese (divided)

6 refrigerator biscuits

Preheat oven to 350 degrees.  Saute onion in butter or margarine until tender.  In medium bowl, combine onion, chicken soup, sour cream, milk and pimentos.  Mix well and pour into a 11x7 inch baking pan.  Bake for 15 minutes.  Cover with 3/4 cup cheese.  Place biscuits about 2 inches apart on chicken mixture and top with remaining 1/4 cup cheese.  Bake 20 minutes more until biscuits are nicely browned.
