Skillet Lasagna

1 1/2 tablespoons extra virgin olive oil

1/2 cup onion

2 cloves garlic, chopped

2 cans diced tomatoes

1 teaspoon Italian seasoning

1/4 cup tomato sauce

2 teaspoons dried basil or 1/8 cup fresh

1/4 teaspoon pepper

1 teaspoon salt

1/2 cup skim ricotta cheese

3 tablespoons Parmesan cheese

1/2 cup mozzarella cheese

6 ounces cooked pasta, I've used lasagna broken in chunks, penne, rigatoni, any nice large pasta

Parsley (if desired)

Heat oil and cook onions and garlic until translucent. Add diced tomatoes, tomato sauce and seasonings. Cook about 5-10 minutes until a little thicker. Add pasta. Dollop cheeses on top and sprinkle with parsley. Stir lightly and simmer 5 minutes longer.
