Mom's Swedish Coconut Cookies

This is a very delicate butter cookie so you really have to work the dough as it is pretty dry and needs to be worked to stick together. I make these allot for the holidays.

2 cups butter or margarine

2 cups powdered sugar

3 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon vanilla

1 cup flaked coconut

Preheat oven to 350 degrees.  In food processor mix butter or margarine and powdered sugar.  Add flour, baking soda, baking powder and vanilla pulse until soft and dough can be shaped.  Work in coconut with hands.  Shape into a rectangular shaped roll.  Wrap in saran wrap. Chill overnight.  Slice about 1/4 inch wide and bake for about 10 minutes.

(My Mother's directions)  Sift together dry ingredients.  Work in butter, vanilla and coconut as you would a pie crust.  Use hands to work until soft.  Shape in a roll.  Chill over night.  Slice and bake.
