Crock Pot Roasted Pork

This recipe has such wonderful flavor that I can't imagine making pork roast any other way. I think I got the recipe in the little cookbook that came with my first crock-pot 37 years ago. When I'm in a real hurry, I'll just take some dried garlic and sprinkle a bunch on the top...still comes out wonderful. This is definitely a family favorite that I make all the time. I serve this with Impossible Corny Squash Pie. I freeze yellow squash and zucchini from the garden just for this recipe.

1 (3-4 pound) pork roast

Salt and pepper, to taste

1 clove garlic, slivered

2 medium onions, sliced

2 bay leaves

4 whole cloves

1 cup hot water

2 tablespoons soy sauce

Rub pork roast with salt and pepper. Make tiny slits in meat and insert slivers of garlic. Put 1 sliced onion on bottom of pot. Add pork roast, remaining onion, and other ingredients. Cover and cook on low until done, about 6 to 8 hours, or on high for about 4 hours.
