1/4 cup coarse salt
1/8 cup Poivre de Cuisine**
OR 10 peppercorns
1/8 cup Lavender Peppercorns**
OR 10 peppercorns
20 juniper berries
25 allspice berries
1/8 cup dried shallots OR 1-2 tablespoons onion salt
1 tablespoon candied ginger
1/2 tablespoon Chinese Five Spice
In vacuum marinade container or plastic bag mix all ingredients. Add 1/4 cup brown sugar (may also use 1/4 honey, maple syrup OR molasses). Dissolve in 2 cups warm water, after mostly dissolved add two cups cold water. Marinate for 2-5 hours.
Recipe can be multiplied and stored in an airtight container or plastic bag.
To Make: Use 3/8 cup mix per recipe.
