Elderberry Jelly
3 cups berry juice
1/2 cup lemon juice
7 cups sugar
2 pouches liquid pectin.
In large deep pan combine berry juice, lemon juice and sugar. Bring to full rolling boil. Stir in pectin. Boil hard stirring constantly for 1 minute. Skim foam and process 10 minutes. Add 5 minutes for every 1000 feet above sea level.
BERRY JUICE
3 # fruit (it takes allot of fruit for elderberries as they are so small on not very juicy)Wash berries. In pot combine berries with just enough water to prevent scorching. About 1/4 to 1/2 cup. Boil to soften fruit and juice starts extracting. Strain through cheesecloth. I found that a great way to get all the juice out is to set something heavy on top. Let drip at least 2 hours or overnight.
