Elderberry Jelly

3 cups berry juice

1/2 cup lemon juice

7 cups sugar

2 pouches liquid pectin.

In large deep pan combine berry juice, lemon juice and sugar. Bring to full rolling boil. Stir in pectin. Boil hard stirring constantly for 1 minute. Skim foam and process 10 minutes. Add 5 minutes for every 1000 feet above sea level.

3 # fruit (it takes allot of fruit for elderberries as they are so small on not very juicy)

Wash berries. In pot combine berries with just enough water to prevent scorching. About 1/4 to 1/2 cup. Boil to soften fruit and juice starts extracting. Strain through cheesecloth. I found that a great way to get all the juice out is to set something heavy on top. Let drip at least 2 hours or overnight.
