Freezer Coleslaw

I never thought cabbage would freeze well, but this is just as crispy after freezing as before. I now make it every year when the cabbage is fresh and it's great to have in the winter. In summer we usually have creamy coleslaw.I would imagine you could also add some mayonnaise to this and it would make a tasty creamy coleslaw. We just like it the way it is and it's much lower in calories.

1 head cabbage, shredded

1 head red cabbage, shredded

4 carrots, shredded

2 green pepper, finely chopped

1 onion, finely chopped

4 cups sugar

2 tablespoons salt

2 teaspoon celery seed

1 1/2 cups cider vinegar

1 1/2 cups water

Mix cabbages, carrots and green peppers in large bowl. Sprinkle with salt; mix. Let stand 1 hour. Drain and squeeze liquid. Place in freezer containers or mason jars. Pour sryup over veggies leaving at least 1 to 2 inches headspace. Do not have to completely cover vegetables. Freeze.

SYRUP: Bring sugar, salt, celery seed, vinegar and water to boil. Boil 1 minute.
