Honey Spiced Peaches

Makes about 6 pints

1 cup sugar

4 cups water

2 cups honey

8 pounds peaches, peeled and halved

6-4 inch cinnamon sticks

1 1/2 teaspoon whole allspice

3/4 teaspoon whole cloves

Combine sugar, water, honey and spices in saucepan. Bring to boil. Boil 1 minute. Remove from heat. Prepare peaches and pack into jars. Pour over hot syrup (remove spices). Remove air bubbles. Process 30 minutes. Add 5 minutes for every 1000 feet above sea level.

Bring pan of water to boil. Boil peaches for about 1 minute to loosen skin. Peel and slice, removing pit.
