Orange Marmalade

Makes 6-8oz jars

3 cups cooked fruit (4 oranges, 1 lemon, 1 grapefruit)

1/8 teaspoon baking soda

1 1/2 cups water

1 pouch liquid pectin

5 cups sugar

Remove zest from fruit. Thinly slice and place in large pan with water and baking soda. Cook covered for 20 minutes. Remove membrane from remaining fruit. Chop fruit and add to peel mixture. Simmer 10 minutes covered. Combine fruit and sugar. Bring to rolling boil. Add pectin and boil 1 more minute, stirring constantly. Remove from heat and skim foam. Seal in jars and process in water bath 10 minutes. Add 5 minutes for every 1000 feet above sea level.
