Basic recipe for canning peaches.

1 1/4 cups sugar

5 1/2 cups water

In saucepan mix sugar and water. Bring to boil stirring until sugar is dissolved.

8-12 pounds peaches, peeled, halved, pitted and treated to prevent browning

Pack peaches in jars, cavity side down into hot jars. Ladle syrup into jar leaving at least 1/2 inch headspace. Wipe rim. Seal.

PREPARING PEACHES: Boil one minute to loosen skin, immediately put into bowl with ice water, peels should come right off. Slice and pit, treat with Fruit Fresh to prevent browning.
