Red Onion Marmalade

1 1/2 cups thinly sliced halved red onion

1/2 cup finely chopped dried cranberries

1/4 cup lightly packed brown sugar

1/4 cup cider vinegar

2 teaspoons orange zest

3 cups apple juice (unsweetened)

1 package powdered fruit pectin

4 cups sugar

Makes 8-8oz. jars

In skillet combine red onions, cranberries, brown sugar and vinegar. Cook until transparent, about 10 minutes. In large kettle combine onion mix, orange zest and apple juice. Add pectin. Bring to full rolling boil. Add sugar all at once and return to a rolling boil. Boil 1 minute, stirring constantly. Remove from heat, skim off foam. Ladle into jars and seal. Process 15 minutes in water bath. Add 5 minutes for every 1000 feet above sea level.
