Strawberry Rhubarb Jam
I've tried the Strawberry Rhubarb Jam made with the jello and pie filling, but I have become a person who likes "the real thing", so here's the jam made with the real fruits.
2 cups crushed strawberries
2 cups chopped rhubarb
4 tablespoons lemon juice
1 package powdered fruit pectin
5 1/2 cups sugar
In large stainless steel pan combine strawberries, rhubarb and lemon juice. Whisk in pectin until dissolved. Bring to a boil over high heat, stirring frequently. Add sugar all at once and return to full rolling boil, stirring frequently. Boil hard, stirring constantly for 1 minute. Seal. Makes 6- 8 ounce jars.
