Tomato Basil Jam

3 1/2 cups chopped tomatoes, peeled and seeded

1/4 cup lemon juice

1/3 cup chopped fresh basil

1 package powdered fruit pectin

4 cups sugar

Makes 6-8oz. jars

In large kettle bring tomatoes to boil. Simmer about 5 minutes. Stir in lemon juice and basil. In small bowl, combine 1/4 cup sugar and pectin. Stir into tomato mixture. Bring to full rolling boil. Add remaining sugar all at once and return to a rolling boil. Boil 1 minute, stirring constantly. Remove from heat, skim off foam. Ladle into jars and seal. Process 10 minutes in water bath. Add 5 minutes for every 1000 feet above sea level.
