Farmer John's Wild Grape Jelly

This is not your typical grocery store grape. This is made from "wild grapes". I actually found a patch behind my friend "Farmer John's" barn this year and couldn't resist. They are smaller and rounder than a store bought or wine grape.

4 cups grape juice

7 cups sugar

2 pouches liquid pectin

Makes 8-jelly jars.

In large deep pan combine berry juice and sugar. Bring to full rolling boil. Stir in pectin. Boil hard stirring constantly for 1 minute. Skim foam and process 10 minutes. Add 5 minutes for every 1000 feet above sea level.

3 # fruit (may have to adjust depending on how juicy the fruit is and how much juice you need)

Wash berries. In pot combine berries with just enough water to prevent scorching. About 1/4 to 1/2 cup. Boil to soften fruit and juice starts extracting. Strain through cheesecloth. I found that a great way to get all the juice out is to set something heavy on top. Let drip at least 2 hours or overnight.
