Mom's Carrot Relish

This recipe is from my Mother's recipe box, written in her handwriting on a yellowed index card.

6 cups ground carrots

4 cups ground cucumbers

6 large onions

4 sweet red peppers

Mix with 1 hand full salt. Let stand over night; drain in the morning.

Then boil:

2 cups vinegar

3 cups sugar

1 t. celery seed

3 t. mustard seed
