Mary's Rhubarb Upside Down Cake

This recipe is from my Mom's box and is from Mary our next door neighbor as I was growing up.

3 c. cut-up rhubarb

10-15 marshmallows-cut in half

3/4 c. sugar

Arrange rhubarb in 9 or 10 in cake pan. Add sugar & marsh.


1/2 c. shortening

1 c. sugar

Add: 2 beaten eggs

Sift tog.

1 3/4 c. flour

1/4 t. salt

3 t. baking pwd.

Add alternately with 1/2 c. milk

Add 1 t. vanilla to creamed mixt.

Pour over rhubarb

350-45 to 60 min.

Cool 5 min. Loosen edges with knife. Invert on serving plate.

Can use 1/2 c. orange juice, 1 t. grated orange rind instead of milk & vanilla
