Growing up we lived in a double flat. In my younger years, the Hubregtse's lived downstairs from us. These cookies are very good and also a part of my Becky's Cookbook collection. I try to make them each Christmas. The Brazil nuts are what give them a little different flavor from the typical cookie. I would imagine this is a fairly old recipe since the Hubregtse's lived downstairs in the 1960's and were already retired at that time.
3/4 cup shortening (oleo)
1 cup brown sugar
1 egg
1/2 teas vanilla
2 cups all-purpose flour-sifted
1/4 teasp salt
1 teasp soda
1/2 cup coconut
1/2 cup Brazil nuts, chopped fine
1/2 cup candied cherries, cut fine
Cream shortening and sugar thoroughly. Add egg and vanilla. Mix well. Sift the dry ingredients together. Add to creamed mixture. Stir in coconut, nuts & cherries. Chill. Drop by teasp on lightly greased baking sheet. Bake at 375 degrees 8 to 10 min.
