Aunt Evvy's Angel Food Pie

This was one of Aunt Evvy's favorite pies.

4 1/2 tablespoons cornstarch

3/4 cups sugar

1 1/2 cups boiling water

3/8 teaspoon salt

3 egg whites

3 tablespoons sugar

1 1/2 teaspoon vanilla

1 baked pastry shell

1/2 cup cream, whipped

1/2 to 1 square bitter chocolate

Mix cornstarch and sugar in top of double boiler. Add boiling water; stirring constantly, and cook until thick and clear. (approximately 1-12 minutes) Add salt to egg whites and beat until stiff. Add sugar and vanilla, beating until egg whites are creamy. Pour hot cornstarch mixture slowly over the egg whites, beating continuously. Cool slightly and fill pastry shell. Cover with whipped cream (flavoring added if desired) and sprinkle with greated chocolate. This should be made at least 2 hours before serving.
