Annabelle's Manicotti

Annabelle was a cousin to my Mother In Law. She cooked for a group of priests at her church in Buffalo, New York. She made this for us when she visited and we made her sit down and write it out for us. The "sauce" mentioned, would be your favorite spaghetti/marinara type sauce.

CREPES---

3 eggs

1/2 c. oil

1 c. flour

1 c. milk

1 t. salt

1 T. sugar

Beat batter with french whip. Use 1/4 cup batter for each crepe.

FILLING---

1 carton Ricotta cheese

1 egg

2 t. sugar

1/2 t. basil

Fill and roll crepes, spoon sauce over and bake at 325° for 1/2 hour.
