Cousin Jane's Scalloped Potatoes & Beef

4 potatoes

3 carrots

1 c. canned peas

1 c. dried beef or 1 lb. round steak cut into small pieces and browned in a frying pan

Butter or oil




Water or stock

Prepare potatoes & carrots as for boiling & cut into 1/2 in. slices

Pull dried beef into small bits, cover with boiling water, let stand 3 min. then drain, or prepare round steak. Butter a baking dish, put into ti a layer of meat then one of carrots, peas & potatoes. Sprinkle with flour, salt & pepper & add water or stock until it reaches top layer in dish. Bake if raw vegetables 1 1/4 hr. moderate oven or about 1/2 hr. if left over.
