Mom's Club Chicken

This is written on a recipe card that looks like it's from the 50's or 60's.

2 1/2 cups diced cooked chicken

3 cups rice cooked

1-3oz can mushrooms, 2/3 cup

1/4 cup pimiento

1/3 cup French-fried onion rings-crushed


1/4 cup butter

1/4 cup flour

1 cup chicken broth

1 can evaporated milk (1 2/3 cup)

1 cup water

1 1/2 teasp. salt

1/8 teasp. pepper

Melt butter, blend in flour. Gradually add broth, milk and water. Cook over low heat until thick, stirring constantly. Add salt. Fold in other ingredients (except onion rings) into sauce and pour in a greased 2 qt. casserole. Bake uncovered 350 for 40 min. Sprinkle crushed onion rings over the top and return to o ven for 5 min. to crisp onions.
