H.C. Prange's Cold Mashed Potato Salad

This I found with my mother-in-laws pile. Prange's was THE department store in our town for as long as I can remember. As kids we piled into my aunts station wagon each Thanksgiving to see the decorations in the windows. Great memories. Pranges had a delicious deli, little restaurant and bakery in the back corner of the department store. Delicious food. Prange's is long gone and I'm sure my mother-law found this in the newspaper years ago.

7 cups prepared, cold mashed potatoes (instant are best)

Salt & white pepper to taste

1 c. diced ch. celery

1/2 c. diced sw. red pepper

1/2 c. diced onion (tops can be added too)

1/4 c. prepared mustard

1/4 c. sugar

1 cup very thick, good quality, sweet-sour dressing

Combine all ingred. Referigerate a few hrs. to let the flavors meld. Serve cold. Makes 2 qts.
