Chocolate Cream Pie

I make this allot. Delicious rich chocolate flavor.

Baked pie crust

3 ounces bittersweet chocolate, chopped

1 cup sugar

1/4 cup cornstarch

Pinch salt

3 cups milk

3 egg yolks

1 teaspoon vanilla

2 tablespoons butter or margarine

Cool Whip

In a saucepan, combine the chocolate, sugar, cornstarch and salt.  Mix well.  Stir in the milk.  Place pan over medium heat and bring to a gentle boil, constantly.  Boil for 3 minutes, stirring constantly.  In a small bowl, beat the egg yolks and add about 1/2 cup of the hot mixture to the egg yolk and mix well.  Add this back to the mixture in sauce pan.  Continue cooking for another 2 minutes, stirring constantly.  Remove from heat and add the vanilla and butter or margarine.  Pour into prepared pie shell.  Cool completely.  To serve top with Cool Whip.
