Becky's Fruits of the Forest Pie

I tasted Fruits of the Forest pie while on vacation in Colorado, so I came home and tried a few things and ended up with this delicious pie.

1 9-inch pie crust

FILLING

5 1/2 cup mixture of several fruits (chopped rhubarb, blueberries, blackberries, raspberries, cherries, sliced peaches or apples)

3/4 cup sugar

1/3 cup flour

2 tablespoons cornstarch

1/2 teaspoon cinnamon

TOPPING

3/4 cup brown sugar

3/4 cup flour

1/4 cup butter, diced

Preheat oven to 400 degrees. Place crust in large pie pan. Prepare fruit. Mix sugar, flour, cornstarch and cinnamon in large bowl. Gently stir in fruit to coat. Pour filling into prepared pie crust. In medium bowl, mix brown sugar and flour. Mix in butter with a fork or pastry cutter until crumbly. Top pie. Bake about 40-45 minutes. Serve with vanilla ice cream, if desired.
