Lemon Meringue Pie

This is a perfect balance between tart and sweet.

1 single pie crust, baked

3 eggs, divided

1 cup water

1 cup sugar

Juice of one lemon, about 2 1/2 tablespoons

3 tablespoons cornstarch

3 tablespoons butter or margarine

6 tablespoons sugar

Preheat oven to 350 degrees.  Separate TWO of the eggs, save white for meringue.  In a saucepan, beat the TWO yolks well.  Add water, 1 cup sugar, juice, cornstarch and butter or margarine.  Cook until it thickens, stirring constantly.  Pour into baked crust.  Add the third egg white to the other two and beat with mixer until stiff.  Gradually add the 6 tablespoons sugar and beat until stiff and glossy.  Carefully spread meringue over pie and bake until meringue is golden brown, about 10 minutes.
