Sweet Potato Pie

My loves sweet potatoes and this recipe is right up his alley.

Pastry for single-crust pie

2 cups cooked sweet potatoes, about 4 medium

2/3 cup brown sugar

1 tablespoon butter or margarine, melted

1 egg

1 cup milk

1 teaspoon cinnamon

1/2 teaspoon ginger

1/3 teaspoon allspice

1/8 teaspoon salt

Cool Whip (optional)

Preheat oven to 450 degrees.  Line pie plate with pastry.  Use food processor or potato masher to mash sweet potatoes.  In bowl, combine sweet potatoes, brown sugar, melted butter or margarine, egg, milk, spices and salt.  Pour into pie shell and spread evenly.  Bake for 10 minutes, reduce heat to 350 degrees and bake for 30 minutes more or until knife inserted in center comes out clean.  Watch carefully!   Top with Cool Whip if desired.  Makes 6 servings.
