Vienna Schnitzel

This is one of those family favorites that we eat all the time.

Oil for deep frying

2 pork sirloin filets

1/3 cup cake flour

2/3 cup dry bread crumbs

1 egg

2 tablespoons milk

Salt and pepper, to taste

Heat oil to 350 degrees. Pound meat to about 1/8 to 1/4 inch thick. Place flour and bread crumbs in separate dishes. In a third dish lightly beat eggs and milk; add salt and pepper. Coat the meat first in flour mixture and pat lightly. Then into egg mixture and drain slightly. Coat with breadcrumbs by lightly pressing into the meat. Fry until golden brown. About 15 minutes.
