Captain Crunch Chicken

This is one of those special family favorites. While I don't make it often, mainly because it's allot to pull out my deep fryer. It's a holiday time recipe when the family is home for several days. For breakfast that day we have Italian Donuts. Then for dinner, frst we cut sweet potatoes into fries and fry those up, and then the chicken. Everyone stands around in the kitchen eating as fast as I pour these on the plate. These literally disappear.

3 cups Captain Crunch Cereal (or more if needed)

2 cups Corn Flakes (or more if needed)

1 egg

1/2 cup milk

1/2 cup flour

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon pepper

4 chicken breast halves, cut in 1 ounce tenders

Vegetable oil

Heat oil in a large skillet or deep fryer to 355 degrees.

Coarsely grind or crush the two cereals, mix and set aside.  Beat the egg with milk and set aside.

Stir together the flour, onion and garlic powders and pepper; set aside.

Dip the chicken pieces in the seasoned flour and coat well; shake off the excess flour.  Dip in the egg wash, coating well, then dip in the cereal mixture, coating well.

Drop coated chicken tenders carefully in the hot oil and cook until golden brown and fully cooked, about 6 to 7 minutes depending on size.  Drain on paper towel and serve with Honey-Mustard Sauce, Ranch Dressing BBQ Sauce or any of your favorite dipping sauces.

HONEY MUSTARD SAUCE

1/2 cup mayonnaise

2 tablespoons honey

1 teaspoon Honey Dijon mustard

Combine all ingredients and mix well.
