Clay Cooker Baked Chicken

I have a clay cooker and have tried several recipes for it. This is the one we like the best. Tender and juicy with lovely flavor.

3-4 pound whole chicken

1 medium onion, coursely chopped

2-3 cloves garlic, chopped

1 cup parsley, stems removed

3-4 sprigs rosemary

3-4 sprigs marjoram

1 tablespoon olive oil

Salt and pepper

Soak clay pot in cold water for 15 minutes. Rinse chicken and pat dry. Spread olive oil over outside of chicken and sprinkle inside and out with salt and pepper. Place in clay pot and fill cavity with rest of ingredeints. Cover and put in COLD oven. Bake at 425 degrees for 90 minutes or until food thermometer reaches 180 degrees in thigh. Remove top last 10 minutes to brown.
