Elegant Chicken Fettuccini
This is a delicious Chicken Fettucini recipe. I don't make it often, only because it's a little higher in calories than what I can afford everyday but for special occasions it's on my list.
1 or 2 chicken breast halves, cut into bite-sized pieces
12 ounces fettuccini
2/3 cup walnuts, chopped
1/8 cup olive oil
5 garlic cloves, minced
1/2 cup chicken broth
1/2 cup fresh parsley leaves
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup grated Parmesan cheese
Cook pasta according to package directions. In small dry skillet over medium-high heat, toast walnuts, stirring frequently for 3-5 minutes. In large skillet heat olive oil. Add chicken and garlic and cook until chicken is cooked through and browned, stirring frequently. Add pasta, broth, walnuts, parsley, salt and pepper. Toss to combine and cook over low heat for 1 to 2 minutes. Add Parmesan cheese and toss to combine. Makes 4 servings.
