24 Hour Fruit Salad

Very much like my Grandmother's recipe, except she didn't cook her eggs. I wouldn't recommend that in this day and age!!! Be very careful as the egg will curdle if overcooked, so take it slow and once it smoothly coats the back of a spoon, it's done!!! I serve this for the holidays which works out perfect since it needs to be made a day ahead. Just add your bananas and serve.

1 package large marshmallows, halved

3 egg yolks, beaten

1/2 cup milk

1 cup heavy whipping cream

2 teaspoons confectioners sugar

1 teaspoon vanilla

5 cups sliced fresh strawberries

2-3 cups red and/or green grapes

2-3 bananas

Place marshmallows in large bowl; set aside. In a saucepan, whisk the egg yolks and milk. Cook and stir constantly over medium heat until mixture thickens and reaches 160 degrees. It will smoothly coat the back of a spoon. This does not take long and if it cooks too long the mixture will curdle. Cool 5 minutes. Stir into the marshmallows. In a mixing bowl beat the whipping cream, confectioners sugar and vanilla on high until soft peaks form. Fold into marshmallows. Add strawberries and grapes and gently toss to coat. Cover and refrigerate for at least 3 hours or overnight. Just before serving, slice banana and gently stir in.
