I got this recipe from a Bed and Breakfast cooking class I took. Not something I make all the time, but once in a while I'll surprise my youngest son, who loves this stuff with a batch.

Day 1--Prepare---3 cups BOILED and RICED potatoes

Add---1/4 cup melted butter and 1 teaspoon salt

Mix well and chill OVERNIGHT

Day 2--Add---1 cup flour

Form into balls, approximately 1/4 cup each and chill OVERNIGHT.

Day 3-- Take out one ball at a time, roll in flour, drip to get most flour off, flatten a little with hands.  Use a rolling pin with a cover and roll until VERY thin on a well floured pastry cloth.  You should be able to slightly see the writing of the pastry cloth and it should be about 12 inches around.  Cook approximately 1 minute per side on a 450 degree preheated lefse grill or pancake griddle.  Should have lightly browned spots.  Makes about 10.
