Maple Dilled Carrots

Delisious with fresh carrots in the summer. I will also get bunches of carrots at the farmer's market and make this recipe and freeze in meal sized portions for the winter.

2 cups peeled and sliced carrots

1 tablespoon butter

1 tablespoon brown sugar

1 tablespoon fresh dill or 1 teaspoon dried dill

1/4 teaspoon salt

1/4 teaspoon pepper

Place carrots in skillet and pour in just enough water to cover. Bring to a boil over medium heat; simmer until water has evaporated and the carrots are tender. Stir in butter, brown sugar, dill, salt and pepper.

TO FREEZE: Use a little less water and cook until blanched. Add butter, brown sugar, dill, salt and pepper. Freeze in meal sized portions.
