Mom's Mixed Vegetable Casserole

I found this gem in my mom's recipe box.

1 can green beans, drained

1 cup carrots, thinly sliced

1 cup celery, chopped

3/4 cup onion, cut in strips

2 teaspoons sugar

1 teaspoon salt

Dash pepper

1 1/2 tablespoons Minute Tapioca

3 tablespoons butter or margarine, melted

1/4 green pepper, cut in thin strips

1 (15 ounce) can diced tomatoes

Preheat oven to 350 degrees. Butter a medium sized casserole dish. Layer ingredients in order listed.  Cover and bake for 1 to 1 1/4 hours, until veggies are tender. Serves 6
