Spinach Balls
Do you want your kids to eat their veggies. This is the recipe for you. These have become our holiday side dish and everyone looks forward to this treat. On years when we've had company, I have made up to 125 of these and believe me, they disappear!!!
1 medium onion, chopped
2 (10 ounce) packages frozen spinach, thawed and drained well
3/4 cup butter or margarine, melted
2 cups herb-seasoned stuffing mix
1 teaspoon garlic salt
1/2 cup Parmesan cheese
1/4 teaspoon pepper
2 eggs
Preheat oven to 325 degrees. Mix all ingredients together in large bowl. Shape into 1 inch balls. Place on cookie sheet and bake for 20 minutes. Can be made ahead and frozen.
