Summer Squash Dressing

We love summer squash and this recipe is so delicious. A great recipe for those "non veggie" eaters.  They'll never know.

2 cups diced yellow squash and/or zucchini

2 cups crumbled cornbread or cornbread stuffing mix

1/2 cup margarine, melted

2 teaspoons dried sage or 1 tablespoon fresh sage, chopped

1 can cream of mushroom soup

1 egg

1 large onion, chopped

1 1/2 teaspoons sugar

1/4 cup milk

Salt and pepper, to taste

Preheat oven to 350 degrees. Lightly grease medium baking dish. Put squash cubes in microwave bowl add 1/4 cup water. Microwave on high one minute at a time until tender or put in steamer basket and steam 10 minutes until tender. In bowl mix squash, cornbread, margarine, sage, cream of mushroom soup, egg, onion, sugar, salt and milk. Put in baking dish and bake 30 minutes until lightly browned.
