Summer Squash Scramble

I look forward to those first yellow squash so that I can make this for dinner. We usually serve it as a side dish with a small grilled steak.

2 small yellow squash or zucchini, thinly sliced

2 tablespoons butter or margarine

2 eggs,

Salt and pepper

Melt butter in frying pan. Add squash slices. Cover and let cook over low heat until tender and browned, stirring occasionally to prevent sticking. Mix eggs in bowl and pour over squash. Add salt and pepper to taste and stir gently until eggs are cooked. Makes 2 servings.
