Granola

What I really like about this granola is the nice chunks it makes from the brittle type mix that gets poured over.

2 ¼ cups old fashioned oatmeal

½ cup flaked coconut

½ cup sunflower seeds

½ cup sliced almonds

3 tablespoons honey

3 tablespoons butter

3 tablespoons brown sugar

½ teaspoon baking soda


 

 

Preheat oven to 300°. Spray a large sheet pan with cooking spray or use a Sil Pat. Combine all dry ingredients in a medium sized bowl. In sauce pan melt and mix honey, butter and brown sugar. Bring to a boil. Remove from heat and add baking soda. Stir until it puffs up and lightens. Pour over oatmeal mixture and stir very well to coat everything. Pour onto pan and press down with spoon or spatula. Bake 5-7 minutes, stir and press down again. Bake another 5 minutes until golden. Let cool in pan. When cool break apart. Store in an airtight container for up to 3 months. Makes about 5 cups.
