Barleyburger Soup
One of the first soups I'll make when the weather starts cooling down. Reminds me of fall and football!!!
1 pound ground beef
1 cup onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
4 1/2 cups tomato juice
1 1/2 cups chicken broth
1 1/2 teaspoons chili seasoning
1/8 teaspoon pepper
2 to 3 teaspoons salt
1/2 cup barley, uncooked
In large skillet, brown meat and onion. Put into crock pot and add carrots, celery, tomato juice, broth, chili seasoning, salt and pepper. Add uncooked barley. Mix well to combine. Cover and cook on low for 6 to 8 hours. Mix well before serving.
