Cheeseburger Soup

1 pound ground beef

¾ cup onion

¾ cup shredded carrots

¾ cup celery

1 teaspoon basil

1 teaspoon parsley

4 tablespoons butter

3 cups chicken broth

4 diced potatoes

¼ cup flour

2 cups Velveeta, cubed

1 ½ cups milk

¾ teaspoon salt

½ teaspoon pepper

1/4 cup sour cream

In soup pot, brown ground beef in 1 tablespoon butter. Add onion, carrots, parsley, basil and celery and saute’. Add broth and potatoes and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender. In small skillet, melt remaining 3 tablespoons butter and flour. Stir until bubbly and add to soup. Bring to a boil and stir for 2 minutes. Reduce heat and stir in cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream.
